Costa Rican Rice and Beans

Prepare
- 3 cups cooked White Rice
In large skillet, fry
- 2 tablespoons canola oil
- 1 medium onion, finely chopped
- chopped bell pepper (optional)
When onions are well cooked, add
- 2 garlic cloves, minced
Add spices:
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 2-3 tablespoons vegetarian worcestershire sauce (regular can be used as well)
- salt & freshly ground black pepper, to taste
Optionally, add this and fry for awhile
- diced sausage
Then add
- 2 cups cooked black beans, drained and rinsed
Optionally, add this at the last minute:
- fresh cilantro (optional)
- sliced green onions (optional)
Stir in rice
