Granola
Dry Ingredients
- 3.5 cups oats
- 1.5 cups total of nuts, seeds, shredded coconut
- 2/3 cup dried fruit
- 1 teaspoon salt
Wet Ingredients
- 1/2 cup melted coconut oil
- 1/2 cup honey
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350F. Line a large, rimmed baking sheet with parchment paper.
- Stir together dry ingredients in a large mixing bowl.
- Stir wet ingredients in a small bowl.
- Pour wet ingredients into dry and stir some more. Every oat should be coated.
- Press mixture into baking sheet with large spoon.
- Bake for 12 minutes.
- Stir mixture well, then mash back down into a flat layer on the baking sheet.
- Bake 10 more minutes.
- Allow granola to cool completely (at least an hour).
- Break up granola pieces and store well.
