Dry Ingredients

  • 3.5 cups oats
  • 1.5 cups total of nuts, seeds, shredded coconut
  • 2/3 cup dried fruit
  • 1 teaspoon salt

Wet Ingredients

  • 1/2 cup melted coconut oil
  • 1/2 cup honey
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350F. Line a large, rimmed baking sheet with parchment paper.
  2. Stir together dry ingredients in a large mixing bowl.
  3. Stir wet ingredients in a small bowl.
  4. Pour wet ingredients into dry and stir some more. Every oat should be coated.
  5. Press mixture into baking sheet with large spoon.
  6. Bake for 12 minutes.
  7. Stir mixture well, then mash back down into a flat layer on the baking sheet.
  8. Bake 10 more minutes.
  9. Allow granola to cool completely (at least an hour).
  10. Break up granola pieces and store well.
