Tri-Tip

- marinate for a day or two in the fridge
- allow it to come to room temp
- pre-heat oven to 425
- Place tri-tip on roasting rack inside heavy roasting pan. - Optional: place onion slices beneath meat to avoid burning on bottom of pan.
- reduce temp to 350; let it cook 30 min
- flip, cook for 30 more minutes
- remove from oven, loosely cover with foil, let it rest 10 minutes
- slice across the grain
