  • marinate for a day or two in the fridge
  • allow it to come to room temp
  • pre-heat oven to 425
  • Place tri-tip on roasting rack inside heavy roasting pan. - Optional: place onion slices beneath meat to avoid burning on bottom of pan.
  • reduce temp to 350; let it cook 30 min
  • flip, cook for 30 more minutes
  • remove from oven, loosely cover with foil, let it rest 10 minutes
  • slice across the grain
