* [[Tri-Tip Marinade|marinate]] for a day or two in the fridge
* allow it to come to room temp
* pre-heat oven to 425
* Place tri-tip on roasting rack inside heavy roasting pan. - Optional: place onion slices beneath meat to avoid burning on bottom of pan.
* reduce temp to 350; let it cook 30 min
* flip, cook for 30 more minutes
* remove from oven, loosely cover with foil, let it rest 10 minutes
* slice across the grain
